  • 黄油50克
  • 低筋面粉(泡芙皮)130克
  • 草鸡蛋7个
  • 细砂糖60克
  • 蛋黄1个
  • 糖粉30克
  • 牛奶180克
  • 低筋粉(酱)18克

Steps to make 卡士达泡芙

  • 1.牛奶,细砂糖和黄油放入小锅中小火加热
  • 2.加热至沸腾
  • 3.倒入过筛好的低筋粉(泡芙皮),用铲子快速搅拌
  • 4.直到搅拌至没有干面粉后,锅底有一层薄薄的面皮是即可关火。
  • 5.冷却至约50度左右后的面团转移到高盆中,逐个的加入鸡蛋,并搅拌均匀。
  • 6.搅拌均匀的面糊提起铲子尾部呈倒三角即可停止加鸡蛋。
  • 7.选择大号裱花嘴装入裱花袋中
  • 8.铺好油纸的烤盘上挤出合适大小的泡芙
  • 9.进入烤箱中层,上下火180度20—25分钟。
  • 10.烤好的泡芙转移至烤架上晾凉备用。
  • 11.开始做卡士达酱。蛋黄一个加入糖粉
  • 12.用打蛋器搅打均匀
  • 13.牛奶中加入低筋粉(酱)搅拌至没有颗粒。
  • 14.将蛋黄倒入牛奶中
  • 15.搅拌均匀
  • 16.过筛入不粘锅中
  • 17.小火慢慢加热,不断搅拌至浓稠即可离火。
  • 18.将卡士达酱装入碗内冷却后放入冰箱冷藏半小时。
  • 19.裱花袋装上挤泡芙的花嘴
  • 20.将卡士达酱挤入完全冷却的泡芙中即可享受美食。
