驴打滚(微波炉版和蒸锅版)
驴打滚,北京著名的小吃。其实做法很简单,只要水、面的比例掌握好,自己做的比外面的名店都可口。
为给想尝试的朋友们提供更准确、详实的菜谱,俺特意先后用两种方法作了驴打滚:微波炉版和蒸锅版的。

  • 糯米(江米)粉约130克(15ML的10勺)
  • 150ML
  • 黄豆面约30克

Steps to make 驴打滚(微波炉版和蒸锅版)

  • 1.糯米粉加水调成面糊
  • 2.看着还比较稀
  • 3.再加少许食用油,也就一羹勺的量。
  • 4.方法1:放进微波炉用高火2分钟转中火1分钟;方法2:放蒸锅蒸十五分钟。
  • 5.微波炉的面糊刚拿出来的时候,颜色、质感不均,有些地方像没熟的样子,搅拌一下就好了。而蒸出来的面团的手感和微波炉的差不多,略软一点点。
  • 6.红豆沙我买的现成的,有些干,跟干黄酱似的,加了一点点热水稀释了
  • 7.黄豆面在炒锅中炒2、3分钟,小火,闻到黄豆的香味就差不多了
  • 8.黄豆面放凉后铺在面板上
  • 9.放上稍凉后的糯米团
  • 10.糯米团外围也洒上黄豆粉,这东西黏得很,跟皮筋似的,用手压成片状
  • 11.铺上红豆沙——不太好铺呢,因为面片上有豆面,红豆沙不易附着,嘴馋就得有耐心,呵呵
  • 12.之后就容易啦,将面片卷起来
  • 13.切块
  • 14.看着还挺地道的吧
  • 15.剩了点糯米面,做成了圆球状的,比糯米糍软,里面加的红糖、黑芝麻馅
