巧克力豆面包

  • 高粉200克
  • 无糖可可粉20克
  • 红糖30克
  • 鲜奶135克
  • 酵母粉(1/2 1/4)小匙
  • 鸡蛋35克
  • 1/2小匙
  • 巧克力豆30克

Steps to make 巧克力豆面包

  • 1.鲜奶及红糖隔水加热至红糖溶化,放凉后加入可可粉、酵母粉及一半的高筋面粉
  • 2.搅拌约3分钟
  • 3.再加入其余的高粉及盐混合成团,放面包机里揉15分钟,至起膜
  • 4.加入黄油,继续揉20分钟,手工再案板上再摔几下,至扩展阶段
  • 5.加入巧克力豆
  • 6.揉入面团即可,不用太长时间,盖保鲜膜发酵至原来的2-3倍大小
  • 7.均分为8等份,滚圆
  • 8.将面团收口朝下放入事先抹好油的蛋挞模内进行最后发酵
  • 9.至原来的两倍大时,刷上薄薄的蛋白液
  • 10.放入200度预热好的烤箱,中层,上下火,180度,18-20分钟即可
