Steps to make 汤种北海道吐司

  • 1.原料备用。
  • 2.18克高筋粉加入74克凉水充分搅均,小火加热至面浆糊化,即成为汤种。
  • 3.高粉270g、糖43g、盐4g、干酵母5.5g、全蛋液43g、动物性鲜奶油30g、牛奶27g放入面包机。
  • 4.选择和面团程序,开始和面。20分钟和面程序结束后放入切成小块的无盐黄油。
  • 5.让面团慢慢吸收,一直揉到面团可拉出大片薄膜。
  • 6.发酵至2-2.5倍大小。
  • 7.取出面团排气,分割成3等份,滚园后松弛15分钟。
  • 8.擀成长片。
  • 9.然后卷起。
  • 10.放入土司模内。
  • 11.二次发酵至两倍大。
  • 12.加盖,烤箱180度预热,中下层,烘烤45分钟左右。
