Steps to make 什锦素包子

  • 1.【12种食材】干冬笋尖、干马齿笕、干黑木耳、干黄花菜、干香菇、干面筋、干腐竹、干粉条、干海米,五香豆腐干、红萝卜、鸡蛋,(所有干菜都要浸泡过夜,摘洗干净)。
  • 2.【调素馅儿】两个鸡蛋炒熟划散成碎块,其余食材各取等份量切碎备用(干菜泡发后各取50克)。
  • 3.加入1勺盐约7克、2勺蚝油约50克、适量葱姜油和少许亚麻籽油,用手(可戴手套)充分抓拌均匀。
  • 4.【和面】500克雪花粉,加5克酵母粉,1小勺糖,用适量清水(冬天可用温水),和成软硬度适中的面团,盖上保鲜膜,静置发酵成两倍大后,揉成光滑的面团。
  • 5.【擀皮】将面团分成等份面剂子,擀成薄厚适中的包子皮。
  • 6.【包包子】放入适量包子馅儿,包成自己喜欢和擅长的形状。
  • 7.【蒸包子】冷水上锅,先饧10分钟,水开后蒸15-20分钟左右(具体时间取决于自家火力大小),再焖5分钟左右出笼。
