秋冬季节大白菜是餐桌上必不可少的菜,俗话说白菜豆腐保平安,所以多吃点大白菜还是很好的。尤其现在初冬的时节,经过霜打的白菜更是有微微的甜味,甚为可口。况且大白菜的做法多种多样,今天利用经典的鱼香口味来制作鱼香白菜,味道浓郁、酸甜鲜辣,开胃又下饭。

    Steps to make 鱼香白菜

    • 1.白菜取四个白菜帮清洗干净控下水,然后将两边的叶子切掉,只用白菜帮。用刀斜着片成薄片。
    • 2.全部片好的白菜片备用。
    • 3.小葱葱白和大蒜切碎,准备2大勺剁椒,小葱叶子单独切碎。
    • 4.小碗中放入2大勺生抽、1大勺料酒、1大勺白糖、2大勺陈醋、2大勺清水、1大勺淀粉、一点点盐和鸡精搅拌均匀待用。
    • 5.炒锅烧热加入植物油,下入葱白和蒜末、剁椒煸炒出香味。
    • 6.下入白菜片大火快速煸炒几下。
    • 7.迅速倒入调料汁煸炒均匀。
    • 8.最后下入小葱叶关火出锅。
