【栗子荷花鸡】--- 幸福美满的一道滋补年菜
有着"出淤泥而不染,濯清涟而不妖"的高尚品质的荷花一直是我所喜欢的,不但是圣洁的代表,也是美满的象征,代表着和和美美。祝福每一个家庭都能和睦、幸福,永远“有家、有爱、有美食”

栗子荷花鸡栗子是用调好味的鸡茸包着栗子茸蒸制而成的,然后浇上用清鸡汤勾的薄芡,造型美观、味道鲜美。因为形似荷花,于是我给取名为“栗子荷花鸡”

栗子也是我特别喜欢的一种食物,它不但含有丰富的不饱和脂肪酸和维生素、矿物质,能防治高血压病、冠心病、动脉硬化、骨质疏松等疾病,是抗衰老、延年益寿的滋补佳品。而且含有丰富的维生素C,能够维持牙齿、骨骼、血管肌肉的正常功用,常食可养胃健脾,补肾强筋,活血止血。

栗子入菜适宜与鸡肉搭配,栗子有养胃健脾,补肾强筋的功效,而鸡肉蛋白质的比例较高,而且很容易被人体吸收和利用,所以二者搭配更加提升了营养功效,而且栗子的粉甜与鸡肉的鲜美更是相得益彰。

新年就快要到了,家宴上做上一盘和和美美的栗子荷花鸡,一定能吃出开心!吃出幸福。

Details of ingredients

  • 鸡胸肉2块
  • 栗子10来颗
  • 新鲜豌豆少许
  • 洋葱6片
  • 葱花少许
  • 红椒少许
  • 鸡汤少许
  • 猪油少许
  • 食盐1茶勺
  • 白胡椒粉1/4茶勺
  • 蛋清半个

Steps to make 【栗子荷花鸡】--- 幸福美满的一道滋补年菜

  • 1.准备好原料鸡胸肉、洋葱片、新鲜豌豆,洗净。
  • 2.栗子在背上划上一刀,放入开水里煮熟。
  • 3.煮好的栗子剥去外壳,加少许鸡汤,调入一点点的盐,放入料理机搅拌成软硬适中的栗子茸。(为了更好操作,可以放入冰箱冷藏一会)
  • 4.鸡胸肉切成丁后放入料理机搅拌成鸡肉茸。
  • 5.加入蛋清,调入食盐、胡椒粉、和少许葱姜水。
  • 6.顺同一方向搅拌上劲。
  • 7.汤勺里抹上一层薄薄的油,装入调好味的鸡茸,铺满勺子底部。
  • 8.加入适量的栗子茸。
  • 9.再盖上鸡茸,抹平表面。
  • 10.依次做好其他的,再取个圆形盛器(我用的是蛋挞模),用同样的方法装满鸡茸和栗子茸,然后点缀上豌豆,做成蓬莲的样子。
  • 11.放入蒸锅,大火烧开后蒸约5分钟至熟。
  • 12.蒸好以后,脱出汤勺,装盘,摆好。
  • 13.锅中加入适量鲜鸡汤,调入几粒盐和水淀粉勾成薄芡,出锅前淋入少许明油。
  • 14.均匀的淋在蒸好的栗子鸡肉上。
  • 15.用洋葱点缀好莲花瓣,然后在盘子边缘点缀上一些小红椒片增色即可。
