从上个月底开始,市面上大量的月饼就开始卖开了。不过我们这里大多卖的都是神池月饼,是用胡麻油做成饼皮的。想吃点儿其他口味的,也是不好碰呢,所以就自己做点儿苏式的月饼,超极酥~

  • 猪油50g
  • 60ml
  • 低筋面粉100g
  • 猪油75g
  • 红糖20g
  • 蛋液5g
  • 黑芝麻5g

  • 1.红枣洗净,放入电饭煲中或者煮过中煮熟。
  • 2.红枣房凉后,很容易的能撕去表皮,并且将枣核去掉。核桃去皮掰成小块,放入红糖。
  • 3.搅拌均匀,馅料就制作好了。
  • 4.水油皮:面粉、猪油、清水,和好面团,尽量能成、套出手套膜,减少破酥。油酥:低粉、猪油,和成面团。两个面团松弛30分钟左右。
  • 5.将和好的所有面团都分成7个小剂子,馅料也分为7份。
  • 6.水油皮按扁,放入油酥面团。
  • 7.收口包好所有的面团。
  • 8.拿一个面团擀开,从上至下卷起来。
  • 9.卷好的面团旋转90°,擀扁,从上至下卷起来。
  • 10.卷好所有的面团,并且松弛20分钟左右。
  • 11.松弛好的面团两边对折回来,并尽量塑形成圆形。
  • 12.面片擀开,放入馅料。
  • 13.收口包好。
  • 14.做好所有的。
  • 15.刷一层蛋液。
  • 16.表面装饰一点儿黑芝麻。
  • 17.预热烤箱,上下火180度20~25分钟。
  • 18.烤好以后完全放凉。
  • 19.表面酥的裂开了。
  • 20.哇~枣泥馅儿
  • 21.酥皮枣泥月饼。
  • 22.哈哈,开吃啦~
