自制麻香油泼辣子
每次去家门口的那家牛肉拉面馆,就对她放在桌上的那罐子辣椒油迷恋不已。三个字,红!香!辣!之前一直对某牌的凉拌鸡调味料迷恋不已,每次都要买上好几包屯着慢慢吃,做口水鸡,吃汤面,吃炒饭,无论是吃什么都要放上一点,又香又辣超好吃。慢慢的就开始寻思着自己研发,吃货么,就是这样。以前妈妈熬辣椒油,总是放在锅里慢慢熬制,搞得锅子也辣的不得了,之后好久烧出来的菜都是辣的,嗯,我就开始了我的油泼辣子版的自制辣椒调味料。经过研发,嗯,和之前买的某牌凉拌鸡调味料真心像,不知道她里面是放了啥添加剂,特别香,这个么……有待后续继续研究升级版。一点点辣椒干,各种香料,一碗油,一点点调味,非常安全健康的自制麻香油泼辣子诞生了。自制的辣椒油装在罐子里,放一段时间,味道会更浓郁,超棒。金龙鱼稻米油是理想的烹调用油,非常适用于煎炸和烘焙食品,它的多不饱和和单不饱和脂肪酸结构,可使食品风味稳定。

  • 自制椒盐粉2勺

Steps to make 自制麻香油泼辣子

  • 1.准备材料,油,辣椒干适量,白芝麻适量,还有之前做好的自制椒盐粉(椒盐粉成分:盐,花椒,黑胡椒,藤椒,之前有过介绍,没有准备的,可以用适量花椒,黑胡椒颗粒代替)
  • 2.取约400ML左右的油,倒入锅中,小火慢慢加热,放入八角和桂皮,小火慢炸,激发出香味
  • 3.将适量辣椒干擦拭一下,用料理机研磨成粗颗粒状,这一步,如果没有准备自制椒盐粉的话,少许花椒和黑胡椒一起研磨就行了
  • 4.另准备一个小锅,将白芝麻冲洗干净,沥干水,放入锅中炒香备用
  • 5.之前的油锅油温慢慢升高,香料变黑,用漏勺捞走,继续加热至油冒烟,关火,稍微冷却一会,冒烟时候的油温太高,辣椒干容易炸糊,颜色就不好看了
  • 6.将辣椒碎和椒盐粉、炒好的白芝麻、适量的盐混合拌匀,将碗放在准备好的区域,之后碗会很烫,就不能再移动了
  • 7.将油倒入碗中,顿时沸腾起来,用筷子搅拌一下,搅拌好的热油完全晾凉
  • 8.入密封瓶保存,保存一周后食用味道更佳
