广式金丝肉松月饼
“今天做的这款月饼,馅料都是自制的,绿豆沙里加入肉松,又根据自家口味进行了调整,做好的月饼吃起来一点也不甜腻。
中秋节就快到了,也快快亲手做上几块月饼和家人共享吧!

  • 枧水3克
  • 玉米油30克
  • 绿豆沙250克

Steps to make 广式金丝肉松月饼

  • 1.饼皮原料:中筋粉、枧水、玉米油、转化糖浆
  • 2.饼皮制作:玉米油、转化糖浆、枧水一起倒入容器中,用筷子或手动打蛋器搅拌均匀成乳化状。
  • 3.筛入面粉。
  • 4.拌匀成面团,包上保鲜膜室温松弛两三个小时。
  • 5.馅料食材:绿豆沙、原味肉松
  • 6.把绿豆沙倒入肉松中一点点搓匀
  • 7.搓到用力握能成团就可以了。
  • 8.搓好的肉松馅每个30克(因为肉松体积较大,30克的现,15克皮,共45克用50克的模具刚刚好),
  • 9.松弛好的面皮每个15克称好。
  • 10.所有馅料依次分好,醒好的皮按每个15克称好。
  • 11.取一份皮在手中压扁,放入一份馅料,用虎口把面皮小心的往上推。直至全部包紧。
  • 12.包好后团圆
  • 13.包好后的月饼生坯放入淀粉中滚一下
  • 14.放入模具中
  • 15.直接压在烤盘上并推出
  • 16.全部做好后喷少量水
  • 17.放入预热好的烤箱200°烤五分钟。
  • 18.烤五分钟左右月饼定型取出,薄薄刷上一层蛋黄水。
  • 19.再次放入烤箱,烤15分钟左右。刚烤出的月饼稍稍有些硬,放凉后室温密封保存,一两天后就会回油,饼皮就会变的油润。
