红烧肘子
以前也做过红烧肘子,但是把大肘子炒了糖色,这次改了下方法,更易操作。

  • 老抽半勺
  • 生抽2勺
  • 料酒2勺
  • 1颗
  • 八角1个
  • 香叶2个
  • 花椒粒3个
  • 冰糖20个
  • 4片
  • 3勺
  • 大豆酱1勺

Steps to make 红烧肘子

  • 1.肘子皮烤一下用水浸泡2小时,洗净刮去毛焯水。
  • 2.备好葱姜、八角、香叶、花椒粒等。
  • 3.焯好水捞出擦去水分,皮上抹上老抽上色。
  • 4.锅中放油,放冰糖炒糖色。
  • 5.小火炒至褐色。
  • 6.加少许开水成糖色水,倒出备用。
  • 7.肘子放入高压锅中,加入葱姜蒜及生抽、老抽、料酒、盐、八角、香叶、花椒粒,糖色水也倒入,再加水没过肘子。
  • 8.高压锅上汽后焖45分钟。
  • 9.吃时又蒸了15分钟,汤汁再熬一下浇到上面。
