【玉米燕麦牛肉面包】---- 全面营养的面包
虽然说做面包讲究配方,不能像烹饪那样信手拈来,也不能咸甜配料皆随意。但只要掌握了做面包的要点,熟悉的掌握了它的根本,还是一样可以随心释放自己的创意的。偏甜的、偏咸的、杂粮的、米粉的、全麦的....,只要想得到,都可以在小小的面包机里满足自己的需要。

这次我做了一个从未做过的牛肉面包,在面团里加了杂粮玉米粉和燕麦。在内馅里卷了牛肉干、鱿鱼丝,和海鱼片,还有蜜红豆。吃起来口感特别的丰富,有一点甜,有一点咸。

  • 高粉200克
  • 玉米面50克
  • 清水120克
  • 全蛋液30克
  • 3克
  • 细砂糖40克
  • 奶粉15克
  • 干酵母1小勺
  • 黄油30克
  • 即食燕麦片20克

Steps to make 【玉米燕麦牛肉面包】---- 全面营养的面包

  • 1.面团原料图。
  • 2.配料图。
  • 3.取一较大的盆,除了黄油和燕麦片以外的原料,按先液体再粉类的顺序依次添加原料,最后把面粉挖个坑,在里面放入酵母,然后埋上。
  • 4.用筷子搅拌成无干粉的状态。(大约用时半分钟,这样做是为了节省面包机的和面时间)
  • 5.搅拌好的面团倒入面包机里。
  • 6.盖上盖子,启动面包机的和面程序。(1个程序为15分钟)
  • 7.和面程序结束后,面包机会停止搅拌,这时候加入黄油,再次启动1次和面程序。
  • 8.2个和面程序结束后,取面团检测一下,能轻松的撑开薄膜。
  • 9.加入燕麦片,启动和面程序。
  • 10.大约3分钟,燕麦片就会全部被包裹在面团里,这时候手动关闭和面程序。
  • 11.盖上保鲜膜,启动面包机的发酵功能,把面团发酵至原来的2.5倍大左右。
  • 12.发酵好的面团取出排气,滚圆,盖上保鲜膜静置15分钟。
  • 13.15分钟后,把面团擀成椭圆形。
  • 14.进行三折后盖上保鲜膜继续静置10分钟。
  • 15.然后旋转90度,擀成长条,先铺上适量牛肉干、鱿鱼丝和海鱼片,最后放蜜红豆。因为蜜红豆比较小,可以放在肉类的缝隙里,如果先撒蜜红豆,肉类就不好铺了。(这一步注意面团的宽度要和面包机的长度相等)
  • 16.从上至小紧密的卷起来,放入面包桶,盖上保鲜膜,启动面包机的发酵功能进行发酵。
  • 17.当面团发酵至原来的2到2.5倍大时,在面团表面均匀的挤上卡仕达酱,并在面包桶上包上锡纸。
  • 18.启动烘烤功能,时间设置为35分钟。上色选择“中”,开始烘烤,途中烘烤15分钟以后,快速拿掉锡纸继续烤至结束。图为烤好的面包,烤好后倒出放在烤网上晾至手心温度时,放入保鲜袋或者保鲜盒密封保存。
