Steps to make 辣卤猪蹄

  • 1.原材料。猪蹄已经烧过皮剁成块的。
  • 2.冷水下锅,加姜片、料酒、花椒焯制10分钟。
  • 3.看,好多的脏沫呀。
  • 4.把焯好的猪蹄清洗干净备用。
  • 5.锅中放少许油,下入冰糖小火不停搅动。
  • 6.糖融化后变成浅黄色,并冒小泡泡时继续搅。
  • 7.糖颜色变深,泡泡将要消失时加入开水。
  • 8.水开后可以看到有糖色了。
  • 9.把汁水倒入煮锅,加入姜片、干辣椒、花椒以及八角、桂皮、香叶、山奈、豆蔻、草果等香料煮20分钟。
  • 10.卤汁有香味出来时放入猪蹄,调入盐、料酒、生抽、老抽、胡椒粉、鸡精。
  • 11.大火烧开,然后转小火盖上盖焖煮1小时。不喜欢香料味重的可在半小时后把香料捞出不要。
  • 12.起锅装盘。
