  • 玉米淀粉1茶匙
  • 料酒4茶匙
  • 2小勺
  • 生抽1茶匙
  • 1茶匙
  • 鸡精1小勺

Steps to make 香辣水煮鱼

  • 1.鱼洗净片成鱼片,头尾和鱼片分开放(我是请卖鱼的人帮忙片好回家再清洗)
  • 2.鱼片中加入料酒2茶匙,白胡椒粉1小勺,花椒粉1小勺,玉米淀粉1茶匙,盐1小勺蛋清一个搅拌均匀,腌制20分钟左右
  • 3.准备好蒜,花椒,八角,香叶,桂皮,郫县豆瓣酱
  • 4.葱3根,姜,蒜切片,干辣椒切段
  • 5.芹菜,绿豆芽洗净 ,芹菜切段备用
  • 6.起锅烧开水加入1小勺盐,放入豆芽焯水捞出,再放入芹菜焯水捞出,垫在锅底
  • 7.起油锅加热,爆香八角,花椒,红椒,香叶,桂皮
  • 8.加入葱姜蒜翻炒出香味儿
  • 9.再加入两大勺郫县豆瓣炒出红油
  • 10.最后加入适量的开水,放入鱼头鱼骨,大火烧开,中小火炖15分钟左右,加入料酒2茶匙,生抽1茶匙,糖1茶匙,盐1小勺,鸡精1小勺调匀
  • 11.如果锅比较小,可以把鱼头先捞出,再把腌制好的鱼片一片一片的放入汤中,轻轻划开(太重鱼肉容易碎)
  • 12.汤烧开后,马上关火,把鱼和汤一起倒入铺好菜的鱼盆里(汤烧开后,不能久煮,时间长了鱼肉会老)
  • 13.另起一锅,倒入玉米油加热,爆香辣椒,炒出香味,等油快冒烟时,趁热浇在鱼上
  • 14.撒上香菜即可。趁热开吃,香辣,嫩滑,吃起来特别爽...
