  • 藕粉75克
  • 粘米粉50克
  • 小麦淀粉25克
  • 细砂糖75克
  • 牛奶210克
  • 210克

Steps to make 【紫薯凉糕】

  • 1.1、备好各类材料;
  • 2.2、紫薯去皮切块放入碗里。蒸锅加水大火烧开以后,将紫薯放入蒸锅大火蒸12分钟左右,直到紫薯软烂;
  • 3.3、将蒸好的紫薯以及除椰蓉以外的所有配料放入食品料理机;
  • 4.4、打成细腻的浓浆
  • 5.5、取一个方形的耐热保鲜盒(或你有的其他耐热容器),保鲜盒内涂上薄薄一层植物油防粘(用玉米油或葵花籽油,不要用花生油之类味道重的油,以免影响成品的味道)。
  • 6.6、将1/3的紫薯浓浆倒入盒子里。将盒子放入烧开水的蒸锅,中火蒸10分钟。打开蒸锅盖,将另外1/3的紫薯浓浆倒入盒子里,继续蒸10分钟。再倒入剩下1/3的紫薯浓浆,蒸15分钟。蒸的时间总计35分钟。
  • 7.7、蒸好后,紫薯浓浆会定型成糕状。待冷却后,放入冰箱冷藏直到冰凉;
  • 8.8、将冷藏好的紫薯凉糕取出,用刀切成16小块;
  • 9.9、将切好的凉糕在椰蓉里滚一圈,使表面均匀粘上一层椰蓉,就可以装盘食用了。
