Steps to make 贝壳卷

  • 1.250g面粉,温水135g,酵母2g。酵母先用水化开。
  • 2.水不要一次倒入面粉中,要预留15g左右的水量。和成粗糙面团后,用拳头蘸水扎面。直至预留出来的水用光。
  • 3.扎面会使面团变得光滑,筋性十足。
  • 4.面团发至,气泡充盈。
  • 5.面团通过揉搓来排气,最后揉搓成长条状。
  • 6.切成均匀的8个剂子。每个剂子约47、8克的样子。
  • 7.擀成椭圆片状,长约8、9公分的样子。
  • 8.用刀背或刮板压出花纹。
  • 9.用刮板把每一个印痕往里推推,推出贝壳立体感的边沿。
  • 10.用筷子从面片两边向中心位置收拢。
  • 11.提起、有花纹的那面朝上,放平。
  • 12.也可以用手捏一下,提起,有纹路的一面向上。中间可以撒些面粉或者刷点油防粘连。
  • 13.完成,全部做完,盖布省发。夏天省发15分钟左右,冬天省发至体积变轻。
  • 14.开水上锅,上汽后蒸10分钟。
