潮汕人有别具一格的食俗,例如日常特别喜爱吃粥、有以大米粉制作的名目繁多的粿品、喜爱以腌制品为主的佐餐小菜(咸菜、菜脯)以及制作精致的特色小食(蚝烙、肉丸等)。其中潮汕米粉由于它具有独特风味,质地柔韧,富有弹性,且像发丝一样粗细的形状,条细而匀,色泽洁白,水煮不糊汤,干炒不易断。潮汕米粉善于吸收佐料的味道,可配以各种菜码或汤料进行汤煮或干炒,口感宜人,爽滑入味,味道鲜而不腻。潮汕米粉以其味道鲜美而名扬远近,深受众人的喜爱。

    Steps to make 潮汕美食——鱿鱼芥兰炒米粉

    • 1.大家肯定以为这细细的东西是粉丝或米线吧?呵呵~那当然不是了,这个是家乡特色产品——潮汕米粉。
    • 2.香葱洗净,切长段备用;
    • 3.红辣椒洗净去籽,切末备用;
    • 4.芥兰菜叶用手摘成2寸左右的长度,然后洗净;
    • 5.将洗净的芥兰粗杆子(芥兰茎部)用斜刀切成小片;
    • 6.将买了的新鲜米粉用水冲洗一下,沥干备用;
    • 7.将处理好的鱿鱼洗净,猪肉切片洗净沥干备用。
    • 8.锅里倒入适量食用油烧热;
    • 9.然后盛出适量的熟油,装于碗里备用;
    • 10.倒入鱿鱼快速爆炒一下;
    • 11.将爆炒好的鱿鱼连汁盛出备用;
    • 12.原锅倒入适量食用油烧热,放入适量红辣椒末;
    • 13.接着倒入芥兰快速翻炒,使其受热均匀;
    • 14.然后调入适量精盐炒匀;
    • 15.将米粉均匀的铺在芥兰上面;
    • 16.均匀地淋上熟油;
    • 17.撒上适量胡椒粉;
    • 18.浇上适量的鱿鱼汁;
    • 19.然后,盖上锅盖焖3分钟左右;
    • 20.揭开锅盖,用铲子将芥兰和米粉铲起,把香葱段均匀的码在底下,使其更好受热,散发香味溶于芥兰和米粉之中;
    • 21.然后用筷子和铲子搅匀一会,关火继续搅匀至味道均匀;
    • 22.最后将炒好的米粉盛出装盘备用。

    • 26.然后倒入爆炒过的鱿鱼;
