胡萝卜蛋糕
这款海绵蛋糕中添加了胡萝卜丝,用肉桂粉与胡萝卜搭配,吃的时候与酸甜的奶油霜相达,口感甚佳;以前做过不打发鸡蛋的,全蛋打发的更加松软可口。

  • 无铝泡打粉7g
  • 肉桂粉8g
  • 柠檬一个
  • 奶油奶酪200g
  • 无盐黄油50g
  • 细砂糖15g

Steps to make 胡萝卜蛋糕

  • 1.准备蛋糕体材料:胡萝卜一个200克,室温鸡蛋4个,泡打粉、肉桂粉与低粉混合;
  • 2.粉类过筛,
  • 3.胡萝卜擦细丝,与稻米油55克、盐一小捏搅拌均匀,待用;
  • 4.4个鸡蛋与细砂糖120克放在打蛋盆中,先用手抽打散鸡蛋,蛋盆下放一盆60度的热水,打蛋盆底与热水不接触;
  • 5.打蛋器高速打发蛋液,打至浓稠后转低速,将蛋糊打匀,最终呈现花纹不易消失的状态,大约14分钟;这要根据自己的打蛋器功率来定;
  • 6.烤箱预热170度,时间设定40分钟;
  • 7.分3次倒入过筛的粉类,大致翻拌均匀;
  • 8.翻拌至稍带干粉的状态下,倒入胡萝卜丝,翻拌均匀不见干粉;
  • 9.倒入已铺烤纸的模具中,模具大小:24*24
  • 10.放入已预热好的烤箱中,下层,时间烤制时间只有25分钟左右,蛋糕插入牙签,拔出不带蛋糕糊,就已经烤好,直接取出;
  • 11.提着烤纸将蛋糕提出,撕开蛋糕四周的烤纸,放烤架放凉;
  • 12.制作奶油霜:黄油50克,奶油奶酪200克,细砂糖15克放入盆中,
  • 13.一个柠檬刨去外皮待用,对切榨汁;
  • 14.软化后的黄油和奶油奶酪打至顺滑,分次加入柠檬汁,打至均匀;
  • 15.奶油霜装入裱花袋中;
  • 16.放凉后的蛋糕表面挤上奶油霜,撒上柠檬皮屑,吃时切块;
