鱼香肉丝
鱼香肉丝是最经典的一道家常菜,虽然人人都在做,但配料不同,调汁比例不同,口味就有差异,我做的鱼香肉丝收汁后锅里盘子里都不会有油,所有的汁全部融进了莱里,我不喜欢油重,更不喜欢从油里捞莱吃,亲,你喜欢哪种口味?试试吧!

  • 蒜蓉辣椒酱2勺

  • 米醋3勺

Steps to make 鱼香肉丝

  • 1.准备好食材;
  • 2.肉切成均匀的丝,不要太细,否则炒的时候会碎,加盐、料酒、白胡椒粉、生粉,用筷子拌匀;
  • 3.莱切成和肉差不多的丝,葱姜蒜切碎;
  • 4.调鱼香汁,醋3勺、生抽2勺、糖1勺;调芡汁,3克生粉加20克凉水;
  • 5.锅里倒适量的油,烧至五成热,用筷子试油温,筷子插油里筷子四周冒小泡,油温就可以了;
  • 6.倒入腌好的肉丝,用筷子迅速打散,肉丝变白立刻盛出;
  • 7.这是炒好的肉丝备用;
  • 8.锅里的油不够添点,多了舀出点,倒入葱姜蒜煸炒出香味,加2勺蒜蓉辣椒酱,炒出色;
  • 9.先下胡萝卜丝,炒片刻再下笋丝,再炒片刻下木耳丝;
  • 10.最后下己炒熟的肉丝,炒半分钟;
  • 11.倒入鱼香汁翻炒片刻;
  • 12.芡汁用小勺搅拌均匀,倒入锅里芶薄芡;
  • 13.最后倒入小青辣丝;
  • 14.翻炒均匀出锅,需不需要加盐您要尝一下,需要,出锅前撒少许盐,咸了整道菜就失败了。
