团圆开屏鱼
喜欢吃蒸鱼,因为蒸出的鱼极大的保留了鱼的鲜香。过节分享这道菜,容易又漂亮,绝对适合过节宴饮,相当拿得出手~好吃营养又养眼啊~

  • 胡萝卜1块
  • 1/2勺
  • 味精1/2勺
  • 料酒2勺
  • 蒸鱼豉油3勺
  • 1汤匙

Steps to make 团圆开屏鱼

  • 1.海鲈鱼一条,大约有2斤重。
  • 2.刮鳞,去腮,取出内脏,洗净备用。
  • 3.切掉鱼头鱼尾备用。鱼身部分从鱼背的骨头切开,大约1.5厘米的厚片。小心不要切断鱼肚。
  • 4.沿鱼肚将切好的厚鱼片放置盘中,鱼肚放置盘中间,鱼片外端自然摆开呈开屏状。放入鱼头鱼尾。
  • 5.葱姜切丝备用
  • 6.放少许盐于鱼肉处,里外抹匀。
  • 7.同样放少味精于鱼肉处,里外抹匀。
  • 8.放2勺料酒与鱼肉处,去腥提鲜。
  • 9.切好的葱姜丝摆于鱼片上,腌制20分钟。
  • 10.鱼肉上放切好的小红椒少许提味。蒸锅内加热水至水烧开,然后放入鱼。
  • 11.大火蒸5分钟即可。
  • 12.取出蒸好的鱼,倒掉盘子里蒸出的汤水,拿掉蒸熟的葱姜丝。
  • 13.重新放少许红椒胡萝卜装饰。鱼肉上倒蒸鱼豉油,提鲜提味。
  • 14.锅内烧热油浇于鱼上,上菜喽~
