鸡肉是我家餐桌的常客,其中一个主要原因是鸡肉易熟,做起来快手。对上班族来说,没有什么比能按时吃上饭再幸福的事情了。所以晚上下班后,想加个肉菜,我大多会选择鸡肉,尤其是鸡胸肉。
我最爱吃的菜就是宫保鸡丁。只要外出吃饭,我必点一道。我的目标就是把我去过的饭店的宫保鸡丁都吃一遍。至今吃过最好吃最满意的一次是在丽江的一个小店里,真的是吃一口永难忘的感觉,后来了解到店主是四川人,好吃的原因也应该跟这个有关系吧。但我对我做的这道菜也很满意,不能说有多正宗,味道是我想要的那个味道。

  • 鸡胸肉1块
  • 葱白1根
  • 花椒10粒
  • 土豆淀粉1勺
  • 香醋3勺
  • 1克
  • 花生米60克
  • 干辣椒7个
  • 姜丝少许
  • 白糖4勺
  • 酱油2勺

Steps to make 【北京】宫保鸡丁

  • 1.鸡胸肉切成小块备用。
  • 2.锅中放少许油,小火,将花生米放入锅中,炸至稍微变色成熟捞出备用。花生米炸完后一定要放置到完全凉,否则容易不脆。
  • 3.调碗汁。碗中加入1勺玉米淀粉,4勺白糖,3勺香醋,2勺酱油,1克盐搅拌匀。(根据食材多少可以自行调整碗汁多少,但肯定是4:3:2:1的比例)
  • 4.锅中放入少许油,将鸡丁煸炒至变色,盛出备用。
  • 5.锅中放入少许油,小火,油热放入花椒,再放入姜丝,最后放入干辣椒段煸香。
  • 6.放入鸡丁和葱白段炒匀。
  • 7.倒入碗汁,炒匀。不要炒得太久,没有汁水即可。
  • 8.关火后放入花生米,拌匀,出锅。
