苏式鲜肉月饼
中秋节做了苏式绿豆蓉月饼
因为太忙,没弄太多花样
绿豆好吃健康,我家爷却觉得有甜没咸太单调,
这不,馋鲜肉月饼也不是一天两天的事了
正好就着中秋的名义
犒劳犒劳自己吧!

轻轻一碰,就酥的掉渣,哈哈

  • 面粉160克
  • 180克
  • 100克
  • 20克
  • 玉米淀粉30克
  • 猪肉末250克
  • 2根切末
  • 3片切末
  • 香菇2朵泡发切丁
  • 干淀粉1大勺
  • 酱油2小勺
  • 香油1小勺
  • 榨菜1小包

Steps to make 苏式鲜肉月饼

  • 1.将水皮的材料(面粉320克,糖20克,油50克,水100克)活成软面团,盖上保鲜膜静置半小时后分成24份。
  • 2.将油皮材料(面粉160克,玉米淀粉30克,玉米油100克)活成面团,分成24份。和上面的水皮都盖好保鲜膜,以防风干。手上稍微涂点油,案板也抹少许油。
  • 3.水皮一份擀成长圆形薄饼,取一份油皮均匀抹在擀开的水皮上,沿纵向从一端叠三褶,然后擀开成一薄薄的长方形
  • 4.沿纵向卷起成小圆筒
  • 5.卷起成小球状, 保湿静置松弛10分钟。
  • 6.压扁小球擀成圆饼,圆饼上放猪肉馅,收口捏好粘住,收口朝下压扁,和一般做饼的方法一样。
  • 7.做好后放入预热至375oF/190°的烤箱,烤18分钟。(注意烤箱温度,以防开裂或者烤糊)
