绿豆沙蛋黄月饼

Steps to make 绿豆沙蛋黄月饼

  • 1.咸蛋黄喷洒上少许白酒,烤箱上下火180度5分钟出炉。
  • 2.碗中放入转化糖,玉米油,枧水,搅拌均匀。
  • 3.加入中筋面粉和吉士粉,用刮刀翻拌均匀至无干粉。
  • 4.拌匀的饼皮盖上保鲜膜静置醒发2小时左右。
  • 5.准备一份广州酒家的绿豆沙馅料。
  • 6.将绿豆沙馅每个称重55克。
  • 7.包入一个蛋黄,用虎口位置收口。
  • 8.饼皮称重每个30克搓圆。
  • 9.饼皮按扁包入一个蛋黄绿豆沙馅,用虎口位置慢慢往上推收口。
  • 10.模具涂抹少许玉米油,将月饼胚放入100克的模具中。
  • 11.按压出花型,摆放在烤盘上,喷洒上少许水雾,烤箱提前上下火200度预热。
  • 12.烤箱中层上火/空气烤200度烤5分钟定型。
  • 13.5分钟后取出刷卡一层薄薄的蛋黄液。
  • 14.继续回炉烘烤12分钟,中间观察月饼上色情况,适当的加盖锡纸。
  • 15.出炉后的月饼晾凉后装入月饼胚中。
  • 16.封口待两三天后月饼回油即可品尝。
