炒米刮油腊八粥
又到了腊八节,新年的脚步也近啦!这样一个寒冷的日子里怎么能少了热乎乎的腊八粥呢?在河南,腊八粥又叫“大家饭”,是由多种食物熬煮而成,是农家为了庆祝丰收的传统食物。
        关于腊八粥的配料史料有多种记载,其实我觉得并不一定需要按照固定的配方去采购原料,利用手边的食材,丰丰盛盛的一起熬煮就很好。
        而我今天做的这道腊八粥比较特别,现将米类都放在锅中中小火炒制,将米里的淀粉分解,这样米类就能如“活性炭”一般把肠胃内的油脂吸附带走,达到“刮油”的效果。现在人们有时饮食油腻,肠胃不适的时候,不妨尝试一下这种炒米刮油粥。
       既然今天做的是应景的腊八粥,那么在炒米的基础上,我又在粥里加入了枸杞,大枣,核桃仁,川贝等食材,弥补炒米在营养方面的不足,及健康又营养。

    Steps to make 炒米刮油腊八粥

    • 1.取大米、薏米、黑米、燕麦共一杯
    • 2.倒入无水无油的锅中,中小火进行炒制,期间要一直翻炒,防止焦糊和米粒迸溅。
    • 3.整个过程注意观察大米的颜色,刚开始时大米是透明状的
    • 4.炒制一段时间之后大米变成不透明的白色,这个时候其实就已经可以了。但是多炒一会会有一种锅巴的香味。大家可以根据自己的喜好选择炒制程度。

    • 6.我是炒制到了大米变成与燕麦相似的金色时关火的。
    • 7.准备好大枣,冰糖,小米,川贝和枸杞、核桃仁
    • 8.所有原料一起淘洗冲干净
    • 9.加入1.5升水,开火进行炖煮。炖煮到米类软糯粘稠即可。
