巧克力天使蛋糕
做这款蛋糕,是源于做冰激凌剩下了四个蛋清。
天使蛋糕是一款不用蛋黄和油脂的蛋糕,口感具有韧性,很多人不太喜欢吃,其实如果不嫌麻烦,我们可以添加一些像柠檬、巧克力、蜜红豆之类的辅料来丰富一下口感,你就会发现好吃很多,而且,天使蛋糕制作起来比较简单,用料又少,最大的好处就是热量很低。

Steps to make 巧克力天使蛋糕

  • 1.准备好所需原料。
  • 2.巧克力用油纸包裹一下(手的温度会融化巧克力)擦成细碎的巧克力屑,放入冰箱冷藏备用。
  • 3.蛋白滴入几滴柠檬汁、盐打成粗泡状。
  • 4.白糖分三次加入蛋白打发至可以拉出弯弯角的湿性发泡状。
  • 5.低筋面粉、玉米面粉混合均匀筛入打发好的蛋白中,用橡皮刮刀快速轻柔从底部往上翻拌混合均匀(不可画圈以免蛋白消泡)。
  • 6.巧克力屑分两次加入蛋白面糊中,快速轻柔翻拌。
  • 7.翻拌好的巧克力面糊倒入模具中放入提前预热好的烤箱中,170度烤35分钟左右至表面金黄,按下去有弹性即可出炉(温度与时间以自家烤箱实际情况调整)。
