冰皮月饼
又到了做月饼的季节,不少人觉得做广式月饼太麻烦了,要煮制糖浆,做好后还得等月饼回油…而冰皮月饼的做法却很简单,无需用烤箱,只要放到冰箱冷藏,吃起来香甜软糯,冰冰凉凉的,也更加适合夏天。

  • 冰皮粉140g
  • 沸水130g
  • 糯米粉20g
  • 黄油15g
  • 莲蓉馅料250g

Steps to make 冰皮月饼

  • 1.不粘锅里倒入糯米粉,炒至轻微米黄色,倒出,做成熟糕粉,晾凉备用。
  • 2.干净容器中筛入冰皮粉,倒入沸水,不停搅拌均匀。
  • 3.放入干净容器,盖保鲜膜,蒸15-20分钟
  • 4.拿出蒸熟的冰皮粉,加入黄油
  • 5.揉至光滑的冰皮面团
  • 6.莲蓉馅料均分25g/个,搓圆
  • 7.把莲蓉馅料包入冰皮(25g/个),搓圆,掌心按压冰皮,包住馅料,搓圆。
  • 8.模具上粘一些熟糕粉,再倒出多余粉料,放入面团压出月。
