Steps to make 水晶虾饺

  • 1.虾去壳去虾线
  • 2.切成粒
  • 3.取1/3剁成虾泥
  • 4.虾粒用一勺料酒、一勺玉米淀粉、一小撮盐、少许胡椒粉、少许姜粉和半个鸡蛋清抓拌均匀
  • 5.虾泥和猪肉馅加一勺料酒、少许姜粉、两勺牛肉粉和半个蛋清拌匀,分几次加入适量清水顺一个方向搅打上劲
  • 6.拌好的肉馅中加入虾粒,拌匀
  • 7.再加入切碎的马蹄和适量什锦杂菜(没有的话可以用胡萝卜末),拌匀
  • 8.300g澄面和30g玉米淀粉、一小撮盐混匀,分次加入沸水拌至雪花状,加盖焖5min
  • 9.加入剩下的60g玉米淀粉揉成面团
  • 10.面团中加入15g油,揉匀
  • 11.面团分成小剂子,放在保鲜膜上用大瓶盖压成薄片(面比较黏,擀面杖不好使,面皮容易干,现做现用)
  • 12.薄皮中包入馅料,包成饺子状

  • 15.蒸锅水开中火蒸5min(开蒸之前用喷壶在饺子表面喷上水,保持面皮的湿度,同时增加透明感)
