Steps to make 红烧牛蹄

  • 1.牛蹄一根,店家为取骨头已经煮至稍软了。
  • 2.其它配料。
  • 3.牛蹄看一下毛,用温水清洗干净切块,灯笼椒切块,尖椒切滚刀,仔姜小米椒切丝,老姜切片,大葱切段。
  • 4.锅内放油,油温五成热放入老姜花椒爆香。
  • 5.再放入大葱节爆出香味,也可以和姜片一起放。
  • 6.放入切好的牛蹄块翻炒,加入一大勺料酒去腥。
  • 7.水气煸干后放郫县豆瓣和老抽煸炒。
  • 8.加入适量清水(最好是开水,高汤更好),再加入适量生抽,陈醋,白糖,十三香,盐,烧开后转小火烧约三十多分钟至入味,中途调味。
  • 9.加仔姜,略烧两分钟大火收汁儿。
  • 10.加入青红椒,翻炒片刻,关火,加适量鸡精,和匀起锅。
  • 11.起锅洒葱花。
  • 12.软糯可口又养生,巴适得板!
