Steps to make 柠檬精小蛋糕

  • 1.准备材料,建议3只半柠檬,鸡蛋是常温鸡蛋。柠檬可用青柠檬,也可以用黄柠檬,额外准备一些柠檬皮屑和柠檬汁。
  • 2.将柠檬用盐搓洗干净外壳,对半切开,戴PVC手套用小勺子将柠檬果肉全部取出。
  • 3.黄油碗底下放一碗热水,隔水将黄油融化成液态,保持温热状态。
  • 4.常温鸡蛋放入干净无水盆中,加入糖粉,预热烤箱上下170℃。
  • 5.底下垫一盆热水,隔水用电动打蛋器高速顺一个方向打发。水温不需要很烫,让另一个盆中的全蛋液保持40℃左右即可。
  • 6.打至提起打蛋头蛋糊能滴落,可以堆积起来,不会立刻消失,全程中高速打,最后用低速打一会,整理大气泡。盆边的蛋糊可以用刮刀刮下,所有都要打到
  • 7.用刮刀承接将液态黄油均匀倒入,刮刀从2点钟方向切入,沿着盆底从7点钟方向翻起到盆中心,用切拌的方式拌匀。
  • 8.筛入低筋面粉,尽量筛均匀,防止低筋面粉过重将面糊压消泡。
  • 9.同样方法切拌、翻拌,快速拌匀,如果有不容易拌开的面粉,在盆边刮下,继续翻拌,直到看不见干粉,面糊光滑,速度一定要快,拌匀后再将柠檬汁和柠檬皮屑也一起倒入,刮刀翻拌几下拌匀即可。
  • 10.拌匀的面糊装入裱花袋中。
  • 11.将面糊挤入柠檬壳中,9分满,成品可以做6-8个柠檬小蛋糕。
  • 12.放入预热好的烤箱下层,上下170℃,烘烤20分钟。
  • 13.烤完取出,冷凉。
  • 14.最后撒上糖霜,装饰薄荷即可。
