核桃枣泥月饼
闺蜜吃过巧克力月饼以后说还要吃枣泥馅的,典型的吃货,而且是嘴比较挑的那种,要知道炒枣泥馅是非常累人的,既然难得回国一趟,就好好招待一番

  • 枧水4克
  • 核桃仁80克
  • 枣泥馅760克

Steps to make 核桃枣泥月饼

  • 1.转化糖浆,枧水,花生油,倒入干净的碗里,混合均匀
  • 2. 加入过筛好的中粉
  • 3. 戴上一次性手套把面团抓成团,盖上保鲜膜放一边静置2小时备用
  • 4.核桃仁用烤箱200度烤5分钟,取出分成小颗粒
  • 5.核桃碎加到枣泥馅里混合均匀
  • 6.枣泥馅按照每个35克平分成24个馅球
  • 7.月饼皮按照每个16克左右分成24个小剂子
  • 8.戴上一次性手套,取其中一个面团用2个掌心的摩擦力按扁,放上枣泥馅
  • 9.手心合起来,用虎口把面团慢慢收圆,皮厚的地方可以推到皮薄的地方,尽量推的均匀一点
  • 10.所有的月饼面团包上馅(也可以每个月饼做好以后马上用模具压成月饼胚)
  • 11.把月饼球放入50克模具里,月饼模具倒扣在油纸上,向下按压,轻轻提起模具,清晰的花纹就出来了
  • 12.所有月饼全部做好以后用喷水壶喷一点点水,静置10分钟,同时预热烤箱180度
  • 13.180度烤6分钟定型取出
  • 14. 在定型好的月饼上刷一层薄薄的蛋液,不要刷太多,尽量用毛刷来刷,再放回烤箱180度烤13-15分钟。
  • 15.上色后及时加盖锡纸,烤熟后晾凉。等待回油
  • 16.50克的月饼大小合适,也可以用100克的模具,3:7的比例可以做12个
  • 17.切开一个,核桃枣泥馅口感很不错
