    Steps to make 宫保鸡丁

    • 1.热锅冷油倒入花生,小火炸熟;将鸡胸肉切成7-8毫米见方的丁;加入淀粉、盐、料酒、食用油抓匀腌制5分钟;将姜、蒜切成片,大葱切成小段,干辣椒切成小段,去除辣椒籽。
    • 2.小碗中加入料酒、蚝油、白醋、盐、生抽、白糖调成宫保汁
    • 3.锅中油烧至六成熟,倒入腌好的鸡丁快速滑散,八成熟时倒出沥油
    • 4.锅中留底油,加入姜片、蒜片、干辣椒、花椒炒香
    • 5.将青笋丁、鸡丁下锅翻炒片刻,倒入宫保汁
    • 6.加入大葱段,(勾芡)快速翻炒,待汁液浓稠时倒入花生米拌炒数下即可起锅
