【川菜】炸酥肉
小时候在老家,麻麻一般会在两个时间炸酥肉,一是逢年过节的时候,再就是家里买了板油或肥肉熬猪油的时候。特别是逢年过节时,几乎家家户户都会炸酥肉,以示喜庆祥和。每当大人们围着锅台炸酥肉的时候,我们这些小的也会围着锅台打转转。麻麻一边炸,我们就一边偷嘴。刚出锅的酥肉,热香酥脆,一口咬下去,耳朵都能听到“咔嚓”的声音,细细一嚼,便是满嘴的肉香与肉香,冲击着舌尖上的每一个味蕾。

炸好的酥肉,一般是直接摆上桌就吃。多下来的酥肉,可以用来蒸川东地区水八碗里头的一道菜“蒸酥肉”,也可以与其他蔬菜搭配做汤,还可以与菌菇、竹笋、竹荪、黄花、木耳等材料配在一起,烩一道菜。我家也常常用酥肉来做面条或烫饭,配上西红柿、丝瓜、小油菜或包菜等等蔬菜,也是非常美味。

炸酥肉,小小的一道菜,承载了无数游子对故土和亲人的深厚情感,也随着游子的脚步走遍了大江南北。

  • 地瓜淀粉250-300克(红薯淀粉)
  • 玉米油750克(植物油)

  • 川花椒一小把

Steps to make 【川菜】炸酥肉

  • 1.猪肉洗净,切薄片。一般选择带有部分肥膘的猪肉,肥肉比例不超过3:7。
  • 2.放适量盐、酱油、花椒、花雕酒(或料酒、白酒)、少许鸡精腌制半小时。
  • 3.放入地瓜淀粉,淀粉撒上适量盐。
  • 4.打入两个鸡蛋。要想酥肉炸得金黄酥脆,鸡蛋必不可少。想要更酥脆,就可以多放一两个鸡蛋。
  • 5.一点点倒入清水,打湿地瓜淀粉。等淀粉吸足了水分,用手将淀粉和开,让每一片肉都能均匀裹上淀粉,一边和一边用手使劲抓一抓肉按摩按摩,这个动作可以多做几分钟。要注意淀粉不能和得太干,太干影响酥肉口感;也不能太清,太清挂不住糊,一入油锅就炸散了。所以挂糊的状态参照图片的样子就好。
  • 6.再发一张裹好淀粉的状态。这个步骤要用眼睛来判断。
  • 7.锅洗净,烧干后倒入玉米油或其他植物油。少至五六成热。保持中火。
  • 8.用手抓起挂糊的肉片放入锅内,记住是抓一团(大约4、5片),不是抓一片,抓起后,直接放入油锅,手千万不要太用力,以免将肉捏紧实了,影响酥肉的口感。
  • 9.酥肉受热后,会很快膨胀,用筷子将酥肉翻动,均匀受热炸制。
  • 10.酥肉在炸制的过程中会慢慢上浮至锅面,待表面炸酥后,盛出稍放凉。块大的可以用剪刀剪小一点。准备再进行二次炸制。
  • 11.第二次炸制。中火慢慢地将表面炸酥脆。用筷子轻轻敲打时,能听到“蓬蓬”松脆的声音。
  • 12.继续翻动炸制,酥肉漂浮在油面上,要直到表面金黄,就可以捞出来了。
  • 13.经过二次炸制的酥肉,出锅后,一段时间内表面不会出现沁色和回软。
  • 14.这是炸好的酥肉。
