  • 1.鸡爪洗净,去指甲;
  • 2.清水煮沸,放入鸡爪汆烫去污血;
  • 3.捞出,用厨房吸水纸巾吸干水份;
  • 4.热锅,倒入适量的油,油温热了,倒入鸡爪炸至微黄;PS:炸的时候记得盖上盖子,以防油溅出烫伤。
  • 5.炸好的鸡爪放入冰水中,浸泡至膨胀;PS:食用冰水,也可以是冰块。
  • 6.热锅,倒入少许油,放入红辣椒、蒜、豆豉、生姜、八角、香叶等煸香;
  • 7.浸泡的凤爪,捞出沥干水,放入锅中翻炒;
  • 8.放生抽、耗油、料酒、盐翻炒,转为小火收汁即可。
