Steps to make 油泼扯面

  • 1.准备好面粉。
  • 2.加少许盐和食用碱。
  • 3.分次加水,搅拌成棉絮。
  • 4.揉成光滑的面团,盖上保鲜膜,室温醒发30分钟。
  • 5.取出面团,再次揉光滑,分成均匀的小剂子。
  • 6.分别搓成圆柱形,正反面都刷油,盖上保鲜膜,密封保存,放入冰箱冷藏一个晚上。
  • 7.第二天早上,取出面团室温回温30分钟后,再取出一个面剂子,用手按扁。
  • 8.擀开。
  • 9.用擀面杖在中间压几下(喜欢吃宽面条就少压,喜欢吃窄面条就多压)。
  • 10.用两个手掌平托起面皮,从中间慢慢用力往外扯,扯至自己喜欢的厚度,再以着压痕撕开,面条就好了。
  • 11.起锅烧水,水开后,边扯边把面条放入锅中,煮熟。
  • 12.捞出放入大碗中。
  • 13.放入黄瓜丝、辣椒面、葱花、火腿丝,加盐、鸡精、耗油、生抽、老抽、醋。
  • 14.浇上热油。
  • 15.加入香油,翻拌均匀即可食用。
  • 16.好了,尝尝。
