【苏菜】黄桥烧饼
黄桥烧饼产于苏北黄桥镇,它之所以出名,与著名的黄桥战役是紧密相连的。据说战役打响后,当地老百姓就是用这种烧饼慰劳日夜奋战的新四军,给他们增添了力量,鼓舞了士气,最后取得了胜利。谱写了一曲军民鱼水情深的动人篇章。从此,黄桥烧饼就更加出名了。 目前黄桥烧饼店出售的一般是圆形和椭圆形两种,咸甜皆备。特点是色泽金黄,酥脆可口。今儿就先奉上一款咸口的,给亲们品尝哈。

  • 味精2g
  • 香油10g

Steps to make 【苏菜】黄桥烧饼

  • 1.肥猪肉切成碎末。
  • 2.葱切成碎末。
  • 3.火腿切小丁,与肉末葱花混合。
  • 4.加入白糖、盐、香油、胡椒粉和味精。
  • 5.充分搅拌均匀,放置备用。
  • 6.120g面粉和60g色拉油,揉和成油酥面团(左)。200g面粉、10g白糖和酵母,加适量水揉成酵面团(右)。饧10分钟。
  • 7.将酵面团包裹上油酥面团。
  • 8.收口朝下。
  • 9.擀成厚约3mm的薄片。
  • 10.从一侧卷起。
  • 11.稍微按扁。
  • 12.分成七等分。
  • 13.用擀面杖擀薄成饼皮。
  • 14.填入足量的馅料。
  • 15.包好,收口朝下。
  • 16.用手稍稍按扁。
  • 17.表面刷蛋液,沾满白芝麻。
  • 18.放入烤箱,210度烤制15分钟即可。
  • 19.取出稍晾凉。
  • 20.摆入盘中,即可享用。香酥可口的黄桥烧饼,热食口感最佳。
