红烧大黄鱼

  • 生抽5克

  • 白糖少许

  • 玉米淀粉3克

Steps to make 红烧大黄鱼

  • 1.原料:黄鱼、大葱、香葱、姜、蒜、红椒、
  • 2.鱼身两面沾上面粉。
  • 3.姜切片,大葱切段,蒜切片,(红椒切丝,香葱切葱花)。
  • 4.开火,锅内适量油,下入鱼进行煎制。
  • 5.煎制鱼身两面金黄色时,加入清水刚没过鱼就可以了,加入姜片,葱段,蒜片,少量的生抽和盐(因为鱼身上没有切花刀,所以先撒点盐让鱼在烧的过程中慢慢入味),改小火慢慢烧制。
  • 6.调配红烧汁:老抽、生抽、白糖、醋、蚝油、清水、玉米淀粉混合均匀。
  • 7.将鱼籽也放入锅中一起烧制。汤汁慢慢变白,减少。
  • 8.加入红烧汁,中火收汁,试一下咸淡,淡了可以加适量的盐调味。待汤汁收到自己需要的量时,关火。
  • 9.盛盘,撒上红椒丝和香葱碎点缀即可。
