麻辣蘸汁莜面
以前吃过莜面,但从未亲手做过。女儿同学给寄来了她们当地最优质新鲜的莜面,就尝试做起来,哇,居然做成功了耶✌*~

  • 莜面300g
  • 辣椒面1-2勺
  • 白芝麻1-2勺
  • 味极鲜2勺
  • 香醋2勺(或陈醋)
  • 1/2勺
  • 1/2勺
  • 亚麻籽+香油(混合油)1勺

Steps to make 麻辣蘸汁莜面

  • 1.300克莜面,加滚烫的开水(少量多次)和成软硬度合适的面团(能揉成小团而不黏手)。
  • 2.取一小块放在案板上,用手掌根自下而上推城小薄片,然后用食指卷成小卷。
  • 3.卷好后,依次放进笼屉里,水开上锅蒸5-6分钟即可。
  • 4.蒸好后装入盘中。
  • 5.调麻辣灵感蘸汁:葱末、蒜末、白芝麻、西芹丁、辣椒面,用炝过花椒的热油泼香,加适量味极鲜、香醋(或陈醋)、盐、糖、亚麻籽油+香油(混合油),充分搅拌均匀(根据个人口味调整用料和用量)。
  • 6.加适量羊眼骨汤搅拌均匀,好香!
  • 7.鲜香筋道的麻辣蘸汁莜面,试做很成功噢✌~
