五香叉烧肉
对于叉烧肉,我的印象是深刻。作为吃客,我留恋它的特的风味,我欣赏它平凡的外表下蕴含的丰富口感。天秤座,三分钟热度,然而我却总是吃不腻它,待看到盘子逐渐光滑时,我总会不由自主开始怀念,细细思考适才口中的味道,又只觉的无从诉说,只剩满嘴的好吃,好吃!

  • 猪肉500克
  • 麦芽糖2大汤匙
  • 白糖2大汤匙
  • 料酒2汤匙
  • 自制香油2汤匙
  • 红腐乳带汁1汤匙
  • 甜面酱1大汤匙
  • 蚝油2汤匙
  • 老抽大半汤匙
  • 生抽2汤匙
  • 五香粉1茶匙
  • 鸡精1茶匙
  • 胡椒粉1茶匙
  • 红曲粉半茶匙

Steps to make 五香叉烧肉

  • 1.食材里面用到的香油是用(葱姜蒜末炸好过滤出的香油)。我们先准备腌肉要用到调料,先把他们分出来
  • 2.香油是用葱姜蒜末小火炸香后过滤出的香油,平时也可以先炸一些放着,做菜的时候很多都方便用到。
  • 3.麦芽糖很黏要先隔水融化后,再把上面分出来的我调料全部倒入盆里混合搅拌均
  • 4.我们准备一个稍微厚一点的密封袋,把肉肉先放进袋子里,再倒入所得搅拌好的酱汁,排出袋子里多于的空气,把袋子封口密封好,这样腌制的肉肉比较均匀入味。把袋子放到冰箱冷藏室冷藏24小时后再烤制。中间要把袋子翻几次面,让肉肉入味。如果急着吃也可以加重调料比例,腌一个晚上也可以烤制的,这个是看个人习惯。
  • 5.烤盘要铺上一层铝箔纸,烤盘上面放一个烤架,把肉块摆放在烤架上,这样子呢肉块的酱汁就会滴在烤盘的铝箔纸上,到时进烤箱烤时,酱汁会烤焦,因为提前铺上铝箔纸到时就不担心烤盘的清洗麻烦了。
  • 6.烤箱提前预热上下火200度,预热10分钟,把烤盘放进烤箱中层烤制
  • 7.先烤15分钟后,拿出来刷一次刚刚腌肉时留出来的酱汁,两面都要刷,我中间刷了两次,再次放回烤箱烤10分钟,再转小火,上下火130度烤8分钟
  • 8.要根据各家烤箱灵活观察,以免烤焦了,像烤到这个样子就烤好了,拿出来凉凉了再切,要不然容易烫伤手。
  • 9.不烫手了就可以切了,
  • 10.把刚刚腌肉肉的酱汁倒进锅里再熬一会,就可以蘸叉烧肉吃了。
