  • 鸡胸肉300克
  • 红辣椒2个
  • 干辣椒6个
  • 青葱2根
  • 花椒4克
  • 老姜3片
  • 蒜头3个
  • 淀粉少许
  • 鸡蛋液半个
  • 2克
  • 水淀粉2匙
  • 味精少许
  • 生抽1匙
  • 芝麻油1茶匙
  • 黑胡椒粉1克
  • 糯米醋1匙

Steps to make 【四川】麻辣鸡丁

  • 1.制作之前把材料准备好,鸡丁不需要切的太大加入少许的盐小腌制10分钟。蒜头拍碎 红辣椒切成大概1厘米的段,调味料直接调制好方便使用【水淀粉2匙、味精少许、生抽1匙、芝麻油1茶匙、黑胡椒粉1克、糯米醋1匙】混合一起
  • 2.鸡丁加入蛋液揉拌均匀后加入炸粉【可用生粉等】加入蛋液可以使鸡肉保持嫩度以免炸了太老
  • 3.锅热油8分把鸡丁炸好后,再升高油温复炸一次
  • 4.把油倒掉留一些放入老姜爆干,加入蒜头和干辣椒小火爆香
  • 5.再倒入花椒与辣椒片翻炒几下,倒入炸好的鸡丁翻炒
  • 6.翻炒几下后倒入调制好的淀粉酱料
  • 7.大火翻炒几下收汁即可装盘上菜
