  • 蛋清42克(奶油霜用)
  • 黄油135克
  • 清水20克

Steps to make 手绘翻糖蛋糕--贵妃

  • 1.配方的海绵蛋糕原料是做两个6寸的海绵蛋糕胚
  • 2.奶油霜:黄油软化,砂糖+清水慢火熬至118度,慢慢倒入打发至6成的蛋清里,再加入黄油,打发至奶油霜状态。两个6寸蛋糕胚叠放一起,抹上奶油霜,冰箱冷藏定型
  • 3.用油先画好贵妃的原稿
  • 4.白色干佩斯揉匀擀平,按剪好贵妃形状切出干佩斯贵妃初型
  • 5.准备色素:红、黑、棕、肉色,给贵妃增好色彩
  • 6.取出蛋糕胚,均匀包上翻糖皮,画上荷花图
  • 7.将自然风干变硬的贵妃干佩斯用蛋清轻轻刷在背面,贴到蛋糕侧面
  • 8.成品图上面
