私房炸酱面
口味鲜香浓郁,拌料十足,配上脆嫩的黄瓜丝和胡萝卜丝,绿豆芽,爽口不腻。肉酱可以做其他菜,比如酱豆腐,酱排骨,都是很好吃的。

Details of ingredients

  • 两人份
  • 肉糜300克
  • 黄瓜一根
  • 胡萝卜半根
  • 绿豆芽一百克(约一把)
  • 蒜碎一汤匙
  • 姜末一汤匙
  • 葱伴侣豆瓣酱两汤匙
  • 甜面酱两汤匙
  • 鸡精半茶匙
  • 香油少许

Steps to make 私房炸酱面

  • 1.把葱伴侣豆瓣酱,甜面酱各两汤匙,兑一汤匙水,充分搅拌均匀。
  • 2.黄瓜,胡萝卜切丝,和绿豆芽分开焯水备用,黄瓜在开水中烫一下即可,不要久。
  • 3.先把肉糜和一半姜蒜末炒散,发白盛出备用。
  • 4.清洗干净锅,放食用油,量大概和酱差不多,把酱放进油里。盛酱的碗兑水冲一下,用铲子搅拌,油和酱混合均匀。小火烧并搅拌到冒小泡。
  • 5.继续搅拌到酱和油融在一起,倒入肉糜翻均匀。
  • 6.酱碗里沾的酱用半碗水冲一下到进锅里去,和剩下的蒜姜末,搅拌均匀大火烧开。
  • 7.小火熬煮,十分钟。再大火收汁,收汁的时候要不停得搅拌,不能糊锅,收到锅里完全没有水,只有酱和油即可,出锅放点鸡精和香油即可。
  • 8.面煮好,码上蔬菜。
  • 9.浇上肉酱搅拌均匀即可食用。
