秘制香菇啤酒鸭
鸭肉是秋季肉食的首选,鸭属水禽,性寒凉,特别适合体内有热的人食用,可消除暑热给人带来的不适。低热、虚弱、大便干燥者和水肿患者吃鸭肉最有益。鸭肉脂肪含量适中,不但易于消化,还具有滋阴补肾、利尿消肿之功效。

香菇在民间素有“山珍”之称。它是一种生长在木材上的真菌,味道鲜美,香气沁人,营养丰富,素有“植物皇后”美誉,香菇富含维生素B群、铁、钾、维生素D原(经日晒后转成维生素D)、味甘,性平。常食对身体很有好处。

很多人在做这道菜的时候,都觉得鸭肉的腥味太重,或是觉得太过于肥腻,今天我教大家一个处理鸭肉去腥和油腻感的做法。

Steps to make 秘制香菇啤酒鸭

  • 1.处理鸭肉,先切成块
  • 2.用醋与鸭块拌匀(大约要倒平时吃饭那种碗半碗的醋)腌半个小时左右,这样处理后,烧出来的鸭肉没有腥味。
  • 3.生姜切丝,准备好三萘 八角 桂皮 香叶 花椒 干红辣椒
  • 4.干香菇用水泡发至软后
  • 5.用流水冲洗干净
  • 6.接下来要炒鸭肉了,一般来说,做这菜要先把鸭肉焯水,去掉血水,然后再用油来炒,今天我做的这个不用焯水,也不用油来炒鸭肉,而是用鸭肉自身带的油来做成这道菜。锅烧干后,把经醋腌过的鸭肉放在锅里煸炒
  • 7.鸭皮朝下,鸭皮上带有很多油,待鸭肉水气炒干后,油就慢慢的出来了,鸭肉炒干了水份爆出油
  • 8.放入姜,花椒,大料炒出香味
  • 9.再放入豆瓣与酱油炒出颜色
  • 10.炒出颜色
  • 11.倒入一瓶啤酒
  • 12.放入香叶和桂皮大火烧开转小火炖十分钟
  • 13.放入洗干净的香菇继续炖至鸭肉与香菇熟透就算完成了。
