水晶虾饺
虾饺,是广东茶楼、酒家的传统美点。广东人饮茶,少不了来一笼虾饺。上乘的虾饺,皮白如雪,薄如纸,半透明,内馅隐约可见,吃起来爽滑清鲜,美味诱人。

  • 基围虾150克
  • 猪肉馅100克
  • 澄粉250克
  • 玉米淀粉50克
  • 胡萝卜1根
  • 香菇50克

Steps to make 水晶虾饺

  • 1.选择小些,较嫩的香菇洗净放入开水锅中淖水。
  • 2.基围虾去皮和虾肠。
  • 3.把剁碎的香菇末、胡萝卜末、虾泥、猪肉泥一起放入碗中。
  • 4.加入胡椒粉。
  • 5.加入料酒。
  • 6.加入盐。
  • 7.加入剁碎的姜末、葱末。
  • 8.然后把所有调料与馅子搅拌均匀。
  • 9.这是除去剁馅子用的虾以外,额外留一点切好的整段虾,包在饺子里用。
  • 10.把澄粉和玉米淀粉和匀待用。
  • 11.然后烧开水慢慢浇入粉中,并不停的搅拌至基本无干面。
  • 12.待面粉不烫手时,加入少许橄榄油揉成光滑的面团。
  • 13.然后再把面团切成小剂,杆成面皮。(比平时用的饺子皮略厚一点点)
  • 14.包入馅子,再在馅子上面放上一段虾仁包好。
  • 15.锅置火上加入水烧开,把包好的饺子放入笼中,大火蒸制8分钟即可。
  • 16.瞧!玲珑剔透的饺子多漂亮。吃一口,实在是嫩鲜啊
