媳妇儿前几天在公司食堂吃到了这道菜,回来跟我说觉得还不错,于是乎就自己研究了一下做法操作了一下,看上去效果还不错

Steps to make 泡椒嫩兔

  • 1.兔子半只,斩小块,洗净
  • 2.酸萝卜一个,切片
  • 3.酸生姜几只,切片
  • 4.泡椒几只,切段
  • 5.处理好的配料,如图
  • 6.泡小尖椒一小瓶
  • 7.香菜适量,切段
  • 8.莴笋头一个,切片
  • 9.因为要等会儿才用,先用水泡着~
  • 10.沥水,加盐,姜片,花椒,泡小尖椒,淀粉,蛋清(泡兔子肉的水要沥掉的哈,现在看到的水是泡小尖椒的水)
  • 11.搅拌均匀,腌制半个小时
  • 12.炒锅烧热,加约三两菜籽油
  • 13.油烧至八成熟,加入腌制好的兔肉,翻炒约三分钟
  • 14.将兔肉捞出,锅里的油留着继续
  • 15.加入适量豆瓣酱
  • 16.豆瓣酱稍稍翻炒(这张照片很经典啊有木有!油花四溅啊有木有!烧起来了啊有木有!饭店的感觉啊一下子就出来了有木有!!!)
  • 17.加入切好的酸萝卜,酸生姜,泡椒
  • 18.加入剩余的泡小尖椒
  • 19.将这些配料炒一会儿,炒出香味,尤其是把酸辣味儿炒出来(喜欢花椒的可以再加些花椒)
  • 20.将炒好的兔肉回锅
  • 21.稍稍炒匀,不要炒太久哦
  • 22.加入一小碗清水
  • 23.大火烧开,加入莴笋片
  • 24.翻匀,煮上两分钟。出锅前加入少许白糖,醋
  • 25.起锅装盆,撒上香菜,大功告成
