彩虹酸奶慕斯蛋糕
夏天天气炎热,做裱花蛋糕是一项很尴尬的事情。我曾经两次刚给蛋糕抹好面,边缘的淡奶油塌方了,非常非常的影响制作的心情。所以夏天生日的亲,我推荐吃慕斯蛋糕。做慕斯蛋糕的好处是,表面平整无需抹面,冷冻后,装饰奶油挤到上表面,蛋糕冻冻的,减慢融化的速度。而且,其实夏天吃慕斯蛋糕棒棒的,口感冰凉,挺不错的。只要足料,慕斯一样可以做得高大尚哦!

  • 6寸黄油蛋糕片2片
  • 消化饼70g
  • 黄油35g
  • 吉利丁片10g
  • 细砂糖40g
  • 自制无糖酸奶200g
  • 淡奶油200g
  • 淡奶油150g(装饰用)
  • 细砂糖15g
  • 色素少许

Steps to make 彩虹酸奶慕斯蛋糕

  • 1.2片吉利丁片剪碎,用冰水浸泡湿润,然后捞起,隔热水融化。
  • 2.准备两片6寸的黄油蛋糕片或戚风蛋糕片。
  • 3.200克淡奶油打至6分发,还可以流动的状态。
  • 4.往自制的无糖酸奶里加入40克细砂糖,拌均匀,然后加入融化了的吉利丁液,边加入边快速拌均匀。
  • 5.将酸奶液加入到淡奶油中,拌匀,成为酸奶慕斯液。
  • 6.6寸的活底模具先垫上一张6寸的吸油纸,然后放入一片蛋糕片。
  • 7.倒入稍为多于三分之一的慕斯液,然后放入芒果丁,再倒入少许慕斯液填充芒果丁的空隙。
  • 8.然后放入第二片蛋糕片。
  • 9.倒入剩余的慕斯液,并稍为震荡出气泡。表面用盘子盖好,放入冰箱保鲜层冷藏4小时以上。
  • 10.取出,脱模:方法很多种,只要能脱模就行。脱模后用两把小刀将蛋糕转移到蛋糕底托上。
  • 11.150克打发了的淡奶油分别加入色素调成彩虹色,用圆孔裱花嘴,挤出小圆球围成半圆形。
  • 12.最后用白色淡奶油挤出云朵,用巧克力画出大雁,放上装饰糖花和礼物盒即可。
