抹茶冰皮月饼
越来越懒得做烤月饼了,冰皮月饼,俺家厨房的大爱,没有之一。去日本带回来的抹茶粉,正好为今年的月饼换换口味。

  • 糯米粉60克
  • 大米粉60克
  • 澄粉40克
  • 牛奶150ml
  • 玉米油20ml
  • 抹茶30克
  • 豌豆泥3个鸡蛋的体积
  • 蜜枣3个

Steps to make 抹茶冰皮月饼

  • 1.先做馅:豌豆提前3、4个小时泡水
  • 2.高压锅加水,水量高过豌豆
  • 3.压40分钟左右
  • 4.压好的豌豆还比较完整
  • 5.用勺反复碾压
  • 6.直到成泥状
  • 7.盛出放凉
  • 8.加蜜枣
  • 9.切成碎末,揉进豆馅中
  • 10.分成小球
  • 11.制作冰皮:糯米粉、大米粉、澄粉混合
  • 12.倒入牛奶搅拌均匀,最后加玉米油
  • 13.放进蒸锅,开锅后蒸5分钟左右
  • 14.蒸好的面团室温放凉
  • 15.加入抹茶粉
  • 16.揉匀
  • 17.开始包:取一小块冰皮,做出窝
  • 18.放入馅料
  • 19.手指轻轻往上推
  • 20.逐渐收口
  • 21.填入模具中
  • 22.倒扣,脱模
  • 23.用50克的月饼模,一共做了6个
  • 24.豌豆没有去皮,做馅也不必太细腻,这样营养更全面
  • 25.抹茶粉是带糖的,馅借用了蜜枣的甜度,所以没有额外再加糖
  • 26.配一杯自制奶茶,早餐、下午茶都不错噢
