#ACA第四届烘焙大赛#造色情怀 咖啡慕斯
整个制作过程中弥漫着咖啡的香气,整个人的陶醉啦,哈哈。

这款咖啡慕斯没有做淋面,或者用奶油白巧克力做甘纳许淋上,成品也一样优美,味道也一样很赞。

而我做了简单的装饰,少许奶油,再点缀上红樱桃,一样唯美,让朋友惊叹:“舍不得吃呀,真的舍不得吃。”

每天忙于工作,忙于孩子家事,偶尔放松下来,为自己来一份小甜点,一首曲子,一个人或是三五好友,谈笑风生,人生之美哉!

  • 淡奶油250克
  • 糖粉40克
  • 黑咖啡粉20克
  • 吉利丁片2片
  • 温水20克(用于咖啡)
  • 冷水30克(用于吉利丁片)

  • 1.吉利丁片放冷水中浸泡至充分涨发。入微波炉高火30秒为吉利丁溶化。液体呈透明状,放凉待用。
  • 2.咖啡粉加入温水20克调匀,放凉。
  • 3.取糖粉加入淡奶油中。
  • 4.打至6成发,有纹路可以流动状态。(可以在这一步取少量奶油用来装饰用。)
  • 5.装咖啡液倒入奶油盆中搅打均匀。
  • 6.接着倒入吉利丁液,再次搅打均匀。
  • 7.慕斯液用裱花袋装好,再装入模具中。入冰箱冷冻数小时容易脱模;如用慕斯杯冰箱里冷藏4小时即可。
  • 8.脱模后,50克淡奶油,15克糖粉打发,挤上奶油,放上水果装饰即可。
