食谱配比为“山形吐司”两只450g吐司。

Details of ingredients

  • 高筋面粉400g
  • 全麦面包粉100g
  • 蛋清80g
  • 黄油56g
  • 细砂糖50g
  • 耐高糖酵母4g
  • 3g
  • 纯牛奶280ml

Steps to make 全麦吐司

  • 1.将食材混合揉出膜,滚圆。放入容器内,覆盖保鲜膜进行发酵
  • 2.发酵至2~2.5倍大。手指沾少许干粉插入面团内,面孔不回缩不塌陷即可。
  • 3.取出发酵好的面团,徒手进行排气。将其分成均匀的6等份,滚圆,覆盖保鲜膜静置松弛15分钟。(夏季松弛10分钟即可)
  • 4.取一只面团,压扁擀压至面皮,由上至下将其卷起。
  • 5.将卷好的面卷码放在一起,覆盖保鲜膜松弛10分钟。
  • 6.取一只面卷,压扁排掉多余的气泡,擀压至牛舌状,由上至下将其卷起
  • 7.卷好的面卷,每只面卷大概卷2~2.5个卷。
  • 8.码入吐司盒内,进行发酵,可烤箱发酵,可发酵箱发酵。微雨用烤箱发酵,烤箱内放一碗热水,温度在38度以内,湿度75%左右。发酵至9分满即可。
  • 9.发酵好的吐司胚。
  • 10.这时烤箱预热180度上下火预热完毕,将吐司胚送入充分预热好的烤箱烤制。180度上下火烤制40分钟。
