Steps to make 玻璃糖曲奇

  • 1.准备好食材,黄油83g、蛋黄25g、低筋面粉100g、盐1g、糖粉26g、青苹果硬糖6颗。
  • 2.将青苹果硬糖敲碎备用。
  • 3.黄油切小丁,室温软化至手指可以轻松插入的状态。
  • 4.加入糖粉26g、盐1g略微搅拌
  • 5.开电动打蛋器打至顺滑。
  • 6.蛋黄25g分三次加入黄油内,开启电动打蛋器将其搅打至全部融合,每加一次蛋黄液都要搅打至全部融合,在加下一次。
  • 7.打发好的黄油状态,体积蓬发,颜色发白,带着纹路的状态。
  • 8.低筋面粉100g过筛两次,筛入黄油糊内,利用橡皮刮刀切拌均匀。
  • 9.至无干粉状态。
  • 10.这时烤箱预热160度上下火。
  • 11.裱花嘴放入裱花袋内,将曲奇面糊装入裱花袋内。可以先装一半面糊。
  • 12.曲奇胚挤在不粘烤盘内,每只曲奇之间留出足够的空间,避免烤制时曲奇膨胀粘连。
  • 13.挤好的曲奇胚,即可送入预热好的烤箱进行烘焙。
  • 14.烘焙,上下火160度12分钟。
  • 15.取出曲奇胚,将青苹果硬糖碎放入曲奇中间的位置。送入烤箱160度上下火烤6分钟至糖融化即可。
