柱侯酱焖土豆鸭
买回来的冰冻鸭子很大,几乎五磅,所以就分开两边,一边做盐水鸭,一边就做土豆酱鸭了。

  • 姜茸1汤匙
  • 蒜茸1汤匙
  • 葱茸1汤匙
  • 干辣椒3只
  • 柱侯酱1汤匙
  • 花椒1茶匙
  • 生抽3汤匙
  • 1茶匙
  • 1茶匙
  • 白兰地2汤匙
  • 八角1朵
  • 南乳1小块
  • 柱侯酱2汤匙
  • 海鲜酱1汤匙
  • 生抽3汤匙
  • 胡椒粉1茶匙
  • 细砂糖1汤匙

Steps to make 柱侯酱焖土豆鸭

  • 1.把鸭斩成较大的块,放腌肉调料;
  • 2.用手抓腌放入味,静置20分钟或以上,不急着做时腌好后放在密实盒搁冰箱一夜;
  • 3.将土豆削皮后削成稍圆形,这样炖鸭时不至于过多的淀粉掉在汁里,如果喜欢汁糊糊的感觉,直接切滚刀块儿;
  • 4.锅放半锅冷水,放鸭块,开中大火;
  • 5.等水烧开后转中火滚片刻,让浮沫出来,关火,用热水把鸭块洗净;
  • 6.准备好姜茸、蒜茸和葱茸;
  • 7.把鸭 块每边都煎至金黄色,好让鸭片出点油和更香一点;
  • 8.锅底留油,放姜茸、蒜茸和葱茸和八角1朵,爆香;
  • 9.倒入鸭块,放水没至鸭块面,加柱侯酱2汤匙、海鲜酱1汤匙、南乳1块、胡椒粉1/2茶匙、细砂糖1汤匙、料酒2汤匙、生抽2汤匙和盐适量,不要一次过放够生抽或盐,南乳本身也有咸味,等会炖至水干后汁会更咸,转中慢火炖15分钟,让调料出味;
  • 10.为了让菜看起来清爽干净,用网筛把的渣捞起来;
  • 11.倒入土豆,转慢火炖30-60分钟,总之就要炖至鸭块较为酥软;
  • 12.大火收汁,留下汁约大半饭碗,试味,不够咸可加生抽或盐,然后翻拌均匀可装盘。
